Brews and Bubbles
The method is simple: strongly brewed tea + fizz.
Seriously, that’s all you need to do. Brew your tea strong (by adding more tea, not more time), chill it, and add something fizzy (or use your Sodastream).
Of course, we expect you’ll want to get fancier than that! Try pureeing your tea with fruit before adding the fizz, bellini style. Or whip up an herb- or fruit-infused simple syrup for flavor and sweetening. And don’t forget that your favorite liquor libation can make a terrific addition for a 21-and-up twist.
To get you going, here are two refreshing recipes that we’ve been enjoying lately. Feel free to create your own fizzy drinks!
Afternoon Peach Fizz
Ingredients:
- 1 cup Afternoon “High Tea” blend brewed and cold
- 1-2 tablespoons simple syrup (optional)
- half a ripe peach OR 1/2 cup canned sliced peaches
- San Pellegrino or your favorite sparkling wine
- ice
Preparation:
Add ice to large iced tea glass.
In a blender, puree tea, simple syrup (if using), and peaches. Pour over ice in glass.
Fill rest of glass with San Pellegrino or sparkling wine.
Italian Orange Cream Soda
Ingredients:
- 1 cup orange tea, brewed and cold
- 1-2 tablespoons orange simple syrup (optional)
- San Pellegrino
- cream or half-and-half
- ice
Preparation:
Add ice to large iced tea glass. Pour in tea and simple syrup, if using. Stir.
Fill rest of glass with San Pellegrino and top off with a dash of cream.
Garnish with an orange slice and a snazzy straw.
To make orange simple syrup: Bring half a cup water to a boil. Whisk in half a cup of sugar until dissolved. Remove from heat. Stir in 1 tablespoon orange zest and cover. Allow to steep for 20 minutes before straining.
