As you may know, here at Plum Deluxe we are sort of addicted to chickpeas - we always try to find ways to sneak them into pretty much every dish possible. (They're healthy, right?)
The latest chickpea recipe I've whipped up includes chickpeas as an appetizer - mini naan chickpea curry bites! They're rich, flavorful, full of delicious textured goodness.
This recipe is also an easy one as far as curry recipes go - and as mentioned at the end, it is a versatile base if you don't want to do just an appetizer with it. Make a full batch, as you'll definitely be wanting seconds - and thirds the next day for lunch.
Let's dig in.
Chickpea Chicken Curry Bites
Ingredients:
- 2 tbsp. olive oil
- 2 tbsp. butter
- 1 tsp salt
- 1/2 tsp pepper
- 3 cloves garlic, chopped
- 1 lb. chicken, cubed
- 2 tbsp. curry powder
- 1/4 tsp cardamom
- 1/4 tsp cinnamon
- 1 can coconut cream
- 1 can chickpeas, rinsed
- 1 package, Stonefire Mini Naan
- 2 tbsp. butter, softened
Preparation:
In a large saucepan over medium-high heat, sauté garlic in olive oil, butter, salt and pepper for about 2 minutes, then add chicken and cook until it begins to brown.
Once browned, add in curry powder, cardamom, and cinnamon. Continue cooking, stirring occasionally, for another 5 minutes. Turn heat down to medium and add coconut cream. Simmer for 10 minutes, add chickpeas and cook for another 3-5 minutes, until chickpeas have warmed through.
To prepare naan, turn oven on broil. Place naan on a baking sheet and brush with softened butter. Broil buttered naan for approximately 3-5 minutes, or until edges of naan begin to brown.
Allow naan to cool slightly, then top with the chickpea chicken mixture and enjoy immediately.
This recipe also works as curry for an entree! Just whip up a batch of your choice of rice (I'd vote for jasmine in this case, but up to you) and serve the curry on top of the rice in a bowl, with naan on the side. Yum yum yum.
