We recently had almost the full Plum Deluxe crew all in one spot to brainstorm and plan for the months ahead. Of course, we wanted to make the most of early morning productive time, but we wanted to have a quiet, private space for conversation.
Two other parameters were at play: one, a celiac, and two, we had two tubs of yummy "butters" to try -- MELT® is a new organic product that feels like butter, but isn't quite as fattening. Made up of a mix of healthy oils, it's definitely something you want to check out if you cook and consume butter like Julia Child but are looking for some alternatives.
So, what did we end up pairing with our mugs of coffee and tea? Gluten-Free Honey Butter Cinnamon Rolls. These were so good you won't mind the missing gluten, and the fresh wildflower honey from the MELT® adds a delightful touch.
We're using a dough mix, which is a nice compromise between making your own bread dough (sometimes more work than one wants to undertake first thing in the morning) and pre-made cinnamon rolls (usually full of too much sugar and preservatives -- and hard to find gluten free).
These store well overnight, but I doubt you'll have much trouble with leftovers when it comes to this recipe.
Gluten-Free Honey Butter Cinnamon Rolls
Loosely based on recipe from Bob's Red Mill. If you use a different gluten free mix, consult package and adjust if necessary.
Makes approximately 8 rolls.
Ingredients:
Dough
- 1/4 cup honey MELT®
- 1/4 cup sugar
- 2 eggs
- 1 cup warm water
- 3 1/4 cups Bob's Red Mill Gluten Free Pizza Crust Mix (with enclosed yeast packet)
- rice flour for dusting
- 2/3 cup honey MELT®, melted
- 1/2 cup brown sugar
- 2 teaspoons pumpkin pie spice
- 2 teaspoons ground cinnamon
Preparation:
Preheat oven to 375F.
Add 1 tablespoon of the sugar to the warm water. Sprinkle yeast from pizza crust mix on top of water and let sit for 5 minutes. While you wait, beat the honey MELT® and sugar together in a bowl. When combined, add eggs and beat again until thoroughly combined.
Add yeast to butter/sugar/egg mix and blend. Then add the pizza crust mix and blend for about 2 minutes.
Dust a sheet of wax paper approximately 19 inches long with rice flour. Spread out batter across wax paper; using wet hands, continue to press the batter along the wax paper until it fills the sheet smoothly. Once finished, brush a bit of extra honey MELT® alongside the edges.
Combine honey MELT®, brown sugar, cinnamon, and pumpkin pie spice together and spread evenly over batter. Starting at the short end of your wax paper, slowly roll your batter up to create the roll. Cut into 1-inch wide pieces and place into an 8x8-inch greased pan. It's ok if they're touching/crowded.
Allow the rolls to rise in a warm place for 30 minutes, then pop them in oven for 20-25 minutes. Remove from oven and allow to cool before serving. Brush with a bit of honey MELT® when serving.
