Here at Plum Deluxe, we love soup -- so much, we have an entire Pinterest board dedicated to it. Personally, one of my favorites is tortilla soup. It's sort of like taco night, but you can use a spoon.
This recipe is my own spin on the traditional tortilla soup; it's the same base, but I'm adding in seasoned taco meat, a bit more spice, and a tasty bit of cream for the topping. While the ingredients list is long, trust me -- this soup is easy-peasy, and you can have it on the stove simmering while you wait for friends and guests to join you in enjoying it, making it a great fit for your holiday party recipes.
We're using TABASCO in this recipe -- did you know they have a whole line of flavors, many of which are not super-spicy? (Note the entire shelf at our Fred Meyer lined up with the tasty stuff.)
Feel free to adjust the spice level in this recipe; as written, it is flavorful and not spicy, but you can easily up the spice.
Taco Torilla Soup
- 1 pound stew meat, chopped into small pieces
- 1 glove garlic, chopped
- 1 medium-sized onion, chopped
- 4 teaspoons taco seasoning
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon chili powder
- 1/4 teaspoon TABASCO original red sauce
- 1 teaspoon TABASCO chipotle green sauce
- 1 can crushed tomatoes
- 2 cans creamed corn
- 3 cans (14.5 oz) chicken broth
- 3 tablespoons cornstarch
- 1 cup cold water
- 1 cup cheddar cheese, shredded
- 1/2 cup fresh cilantro, chopped
- tortilla chips, for topping
For the topping:
- 2 ounces cream cheese, softened
- 1/4 cup sour cream
- 1 tablespoon taco seasoning
- 1/2 tablespoon TABASCO green chipotle sauce
In your large stew pot, brown the stew meat along with garlic, onion, and taco seasoning.
Once browned, add the spices, tomatoes, corn, and broth. Bring to a boil. In a separate bowl, stir together cold water and cornstarch. Once mixed, add to soup mixture. Reduce temperature and allow soup to simmer for 15 minutes.
While soup is simmering, prepare the TABASCO chipotle topping. In separate bowl, mix cream cheese, sour cream, taco seasoning, and TABASCO green chipotle sauce
Serve soup topped with shredded cheese, cilantro, crushed tortilla chips, and a dollop of chipotle cream.
While it's a lot of spice, this is a great recipe for all palates.
Make sure to brown the meat before adding the other ingredients.
You might need an electric can opener for this one!
It's all worth the effort -- less than an hour, start to finish!
