What Kind of Scone Is It?
Ask twenty people what a scone is and you'll get twenty different answers. However, for this recipe, I wanted something that was somewhere in between heavy biscuit and light pastry. Obviously, a scone with cheddar and scallions is going to be savory, but texture is very important to me. Dense scones are very filling, and I wanted this to be an easy side dish instead of a main course item. These scones ended up being very light and buttery with strong flavors and not a lot of weight. Word of warning though, this means it's easy to eat a bunch of them at once!
Making Cheddar Scallion Scones the Easy Way
I started with a very basic biscuit recipe of flour, softened butter, baking powder, milk, and salt. It doesn't get much more simple than that! All of these ingredients are fairly taste-neutral and so will be a great vessel for our flavors. I broke out the old KitchenAid to do the work for me. Then I dumped all the ingredients into the bowl and mixed. Once it was well-mixed, I added the cheese, scallions, and some garlic powder and mixed some more. The cheese and scallion combination goes very well with a number of herbs. So feel free to add garlic, rosemary, thyme, basil, or whatever other herbs you love.
After everything is mixed, scoop it out with a spoon and drop each scoop onto a greased baking sheet. You can also scoop spoonfuls into a muffin tin for a rounder shape. Even though the dough looks a little too wet, you can still roll it out and cut it into wedges or circles. Just make sure to flour your surface and your hands. After about 15 minutes in the oven, I had perfectly done scones! These Cheddar Scallion Scones are just light enough to eat by themselves and just sturdy enough to dip into soup.

Cheddar Scallion Scones
Ingredients:
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 tablespoon garlic powder
- 1/2 cup softened butter
- 1 cup milk
- 1 1/2 cups shredded cheddar cheese
- 3/4 cup diced scallions (green onions)
Directions:
Preheat oven to 400 degrees Fahrenheit and grease baking sheet or muffin tin.
Mix together flour, baking powder, salt, and garlic powder.
Add softened butter and milk and mix until well blended.
Add cheese and scallions and mix again. If you want more of either of these, add them now!
Drop spoonfuls of dough onto greased surface and put in oven on middle rack.
Bake for 15 minutes or until lightly golden on top. The cheese will make these look a little more golden already, so break one in half to make sure they are cooked through if you can't tell.
