Summer is fast approaching. It’s a time of year when salsa seems to be on every single menu, and why not? It’s an easy, delicious appetizer that almost anyone can enjoy, even with most dietary restrictions. However, it can be easy to get a little tired of the same thing all season, so we decided to change up the traditional tomato-based salsa for this fruit-filled version. This Strawberry Peach Pico is a definite must to try this year.
Made with fresh peaches and strawberries, our pico makes good use of in-season produce and adds a wonderful sweetness to a traditionally savory dish. The jalapeños are optional, so if you are a traditionalist who prefers a spicy more savory salsa, just add a little extra of the jalapeño and you won’t be disappointed. Conversely, if you are planning on using this pico over a desert dish, such as ice cream, using just a hint of jalapeño can be a fun surprise to balance out all the sweetness.
Strawberry Peach Pico is incredibly versatile. Not only is it great served as an appetizer with chips, but it's also delicious as a dessert over a sponge cake, ice-cream, or whipped cream. Additionally, it lends itself well as an accompaniment to many meat dishes, such as grilled chicken or pork. Just cook up your meat and serve it with this salsa on top.
To make this pico quickly, you can toss all of the ingredients into a food processor and give it a quick pulse. However, for this particular recipe we recommend hand chopping so that the ingredients can be cut to different sizes. For instance, since both jalapeños and onions can have very strong flavors, typically these are minced into smaller pieces so they don’t overwhelm the other ingredients.

Strawberry Peach Pico
Ingredients:
- 2 peaches, diced
- 2 cups strawberries, stems removed and diced
- 1/2 small red onion, chopped fine
- 1/2 – 1 jalapeño peppers, minced (optional)
- 1 teaspoon lime juice
Directions:
Place all ingredients into a medium sized bowl and toss well to combine. Serve immediately.
